There are two methods for making the best cup of tea. One is called an infusion
which is used whenever you are brewing a cup of tea from leaves or flowers or
other soft or fragile materials. The second method is a decoction which is used
whenever you are brewing a cup of tea from bark, roots, seeds, or other hard
materials.
The infusion method: Place 1-2 tsp. of the herbal tea into
a cup and add no more than 6 oz. of boiling water. Let steep for 2-3 minutes
and then strain off the herbs.
The decoction method: Place
1-2 tsp. of the herbal tea into 6-8 oz. of boiling water. Continue to boil for
3-5 minutes and then strain off the herbs. Add honey to sweeten.
